We haven't been eating anything too fancy and I really feel like I'm flying by the seat of my pants, but I am trying to eat as Real as possible. We have had a lot of scrambled eggs, salads, and sandwiches for dinner. I certainly need as much nutrition as possible to keep this schedule going. Maybe next week will quiet down? I doubt it...................
Saturday afternoon, I did have a few minutes. We were done with the Cub Scout picnic and home to work on some yard work. Then it started to rain...................No! How can this be happening? I have too much yard work to do. I quickly turned my attitude around to "Hooray! I can try something new in the kitchen."
I've been seeing lots of recipes all over Pinterest for energy balls. They are a combination of oats, nut butter, honey and various other ingredients. Sound pretty good to me. They are also super easy to make since all you have to do is throw everything into a food processor and mix. I was thinking that making these into balls might take too much time, but it turned out to be pretty quick and easy, with the small ice cream scoop that I have.
My version of energy bites are a great combination of crunchy from flax seeds and almond slivers and creamy from the peanut butter and honey. I also included a hint of chocolate, because well............I'm me. I like chocolate. Yum!
Flax seeds may be new to some folks. Before my Real Food Journey started, I had never heard of flax seed. What I have found out is that they are rich in fiber and there is evidence that this tiny seed may help reduce your risk of heart disease, cancer, stroke and diabetes.
OK............so I'll talk more about how great the ingredients are at another time. I need to get to the recipe because these energy bits are delicious. They make a great breakfast, snack, or lunchbox treat. They fill me up and really do give me sustained energy to help get me through my busy days.
Chocolate Energy Bites
2 Cups Rolled Oats
1/2 Cup Slivered Almonds
1/4 Cup Ground Flax Seeds
1 Cup Shredded Coconut
3 TBSP Cocoa Powder
1 Cup Peanut Butter (or other nut butter)
1/2 Cup Honey
1/2 Cup Melted Coconut Oil
1. Place Dry Ingredients into your food processor.
2. Add wet ingredients to food processor.
3. Mix until well blended. Really..........it's that easy.
4. Form into balls and place on a cookie sheet covered with parchment paper. Makes about 20 - 25 balls.
5. Chill to set the energy bites. About 1/2 hour.
6. Store in an air-tight container in the refrigerator. They will last about a week. If you can make them last that long.
